Ingredients

- 5 heads of garlic
- ¼ cup olive oil, plus 2 tablespoons olive oil, divided, plus more as needed
- 2 tablespoons salt, plus more to taste
- freshly ground black pepper, to taste
- 1 cup warm water
- 2 tablespoons honey
- 3 ⅓ cups flour
- 1.5 cups yeast

Preparation
- Preheat the oven to 400°F (200°C).
- Roast the garlic: Using a sharp knife, slice the top ¼–½ inch off the tops of the garlic heads, exposing the individual cloves. Remove any loose, papery skins. Place the garlic cut-side up in the center of a large piece of foil.
- Drizzle all the garlic heads with ¼ cup of olive oil and sprinkle with salt and pepper. Fold the foil around the garlic. Place in a small baking dish and roast in the oven for 40-60 minutes, or until the cloves are soft and creamy.
- Meanwhile, combine the water, the remaining 2 tablespoons of olive oil, the honey, 2 teaspoons salt, the flour, and yeast in a large bowl. Mix well, then knead for 10-15 minutes, until the dough is elastic.
- Transfer the dough into a well-oiled bowl. Cover with a towel or plastic wrap and let rise once for 1 hour in a warm place, or until the dough has doubled.
- Reduce the oven temperature to 375˚F (190˚C).
- Remove the dough from the bowl and transfer half to a 10-inch cast iron pan. Squeeze all the roasted garlic cloves onto the dough and spread in an even layer with an offset spatula. Top with the remaining dough. Cover with a towel or plastic wrap and let rest for 30 minutes.
- Poke holes in the top of the dough with your fingertips. Drizzle with olive oil and add any other desired toppings.
- Bake in the oven for 20-30 minutes.
