Ingredients

  • 5 heads of garlic
  • ¼ cup olive oil, plus 2 tablespoons olive oil, divided, plus more as needed
  • 2 tablespoons salt, plus more to taste
  • freshly ground black pepper, to taste
  • 1 cup warm water
  • 2 tablespoons honey
  • 3 ⅓ cups flour
  • 1.5 cups yeast

Preparation

  1. Preheat the oven to 400°F (200°C).
  2. Roast the garlic: Using a sharp knife, slice the top ¼–½ inch off the tops of the garlic heads, exposing the individual cloves. Remove any loose, papery skins. Place the garlic cut-side up in the center of a large piece of foil.
  3. Drizzle all the garlic heads with ¼ cup of olive oil and sprinkle with salt and pepper. Fold the foil around the garlic. Place in a small baking dish and roast in the oven for 40-60 minutes, or until the cloves are soft and creamy.
  4. Meanwhile, combine the water, the remaining 2 tablespoons of olive oil, the honey, 2 teaspoons salt, the flour, and yeast in a large bowl. Mix well, then knead for 10-15 minutes, until the dough is elastic.
  5. Transfer the dough into a well-oiled bowl. Cover with a towel or plastic wrap and let rise once for 1 hour in a warm place, or until the dough has doubled.
  6. Reduce the oven temperature to 375˚F (190˚C).
  7. Remove the dough from the bowl and transfer half to a 10-inch cast iron pan. Squeeze all the roasted garlic cloves onto the dough and spread in an even layer with an offset spatula. Top with the remaining dough. Cover with a towel or plastic wrap and let rest for 30 minutes.
  8. Poke holes in the top of the dough with your fingertips. Drizzle with olive oil and add any other desired toppings.
  9. Bake in the oven for 20-30 minutes.
  10. Slice and serve.
