Ingredients

Turkey Dry Brine
- 14 lb turkey, defrosted
- 6 tablespoons kosher salt
- 4 tablespoons mixed black, pink, and white peppercorns, crushed or freshly ground
- 2 teaspoons ground coriander
- 6 dried bay leaves, crumbled
- 3 tablespoons light brown sugar
- ¼ cup lemon zest
- 2 tablespoons orange zest
- 1 tablespoon garlic powder
- 1 tablespoon smoked paprika
Garlic Herb Butter:
- 1 stick unsalted butter, (1/2 cup), softened
- 1 tablespoon dried thyme
- 1 tablespoon dried parsley
- 1 tablespoon salt-free garlic seasoning
- 6 garlic cloves, minced
Cavity Stuffing Ingredients:
- mixed fresh herb, (rosemary, thyme, and sage)
- 1 lemon, cut into wedges
- 1 orange, cut into wedges
- 1 onion, quartered
- 7 garlic cloves
Preparation
- Pat the turkey dry with paper towels. Mix the salt and all the dry brine ingredients together. Rub this seasoning mixture all over the turkey, including under the skin and inside the cavity. Place the turkey in a large plastic bag and refrigerate for 24-36 hours to allow the dry brine to work its magic and dry out the skin for extra crispiness.
- 2, Make the garlic herb butter: In a bowl, mix the butter with dried thyme, dried parsley, salt-free garlic seasoning, and minced fresh garlic until well combined. Rub the butter all over the turkey, making sure to get it under the skin for maximum flavor.

- Preheat your oven to 450°F (230°C). Place the turkey in the oven and roast for the first 30 minutes. Then, add 1 cup of water to the roasting pan, reduce the oven temperature to 350°F (175°C), cover the turkey with foil or a lid, and continue cooking according to the size of your turkey (3-4 hours total time, or until the internal temperature reaches 165°F (76°C). During the last 30 minutes of cooking, uncover the turkey to let the skin crisp up to a beautiful golden brown.
- Remove the turkey from the oven and let it rest for at least 30 minutes before slicing. This ensures all the juices stay locked in, making for a perfectly tender and juicy turkey.
